Garlic Dip (Serves 4)

1 kilo of yoghurt
3 tablespoons of extra virgin olive oil
2 tablespoons of balsamic vinegar
2 tablespoons of tzatziki mix
2-4 cloves of chopped garlic (if you want a stronger taste)
Mix all ingredients and leave to cool in fridge for 30 minutes

Egg Lemon Sauce (perfect for soups or stew. Serves 4)

3 egg yokes
Juice of 1 lemon
Add 5 tablespoons of your soup/stew (when the stew is ready to the egg yokes and lemon)
Mix together and then add to soup/stew
There is no need to add butter or flour with this recipe

Salad dressing for a Broccoli and Cauliflower Salad

Boil 1 Broccoli/Cauliflower
4 tablespoons of extra virgin olive oil
Juice of half – 1 lemon
Half tablespoon of oregano
Half teaspoon of salt (the amount of salt is up to you)
Mix together and pour over broccoli/cauliflower

Tomato/Cucumber/Lettuce/Rocket Salad

4 tablespoons of extra virgin olive oil
1-2 tablespoons of balsamic vinegar
1-2 tablespoons of oregano
1/2 teaspoon of salt
1/2 teaspoon of black ground pepper
Mix together and pour over salad

Lemon/Oil sauce for fish dishes

5 tablespoons of extra virgin olive oil
Juice of 1 lemon
1 tablespoon of fish mix
Optional: Add 1 teaspoon of mustard and 1 clove of chopped garlic
Mix together and pour over fish

A tasty marinade for meat

5 tablespoons of extra virgin olive oil
Juice of 1 lemon
1 tablespoon of mustard
1 tablespoon of oregano
Mix together and cover meat with marinade – leave in fridge for a couple of hours before cooking

Honey Salad Dressing (Tomato/Cucumber/Lettuce/Rocket Salad)

Use a clear small bottle (depending on amount for serving)
8 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
1/2 – 1 tablespoon of honey
1/2 – 1 tablespoon of oregano
1/2 – 1 teaspoon of salt
Mix well and add to salad

Dessert

1 kilo of yoghurt
2-4 tablespoons of honey
Mix well
Add handful of walnuts
Enjoy!

All these delicious dressings/sauces are butter and flour free.
